    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Several wet wiping clothes were observed on kitchen counters and in the food prep area. The operator was instructed to store them in sanitizer solution between uses and send dirty clothes for washing.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Scoops without handles were stored directly in salt and sugar bins. Obtain scoops with handles and store them upright to prevent contamination.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The chlorine test strips available on site are expired (2023). Obtain new strips to ensure proper sanitizer concentration.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the main kitchen had no hand soap, and large sponges were stored in the sink; these were removed by the operator, and the soap was refilled. The hand sink at the front service area had no paper towels; these were refilled by the operator. All hand sinks must be accessible and fully stocked with liquid soap and hand towels at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • December 10, 2025: A gap was observed below the exterior door that may allow pest entry. Ensure the gap is sealed or the weatherstripping is replaced to prevent pests from entering._____________________________________________The back door sweep is damaged, allowing for potential pest entry.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Several new and old mouse droppings were observed throughout the facility, including but not limited to the floor across from the walk-in cooler, floor of the ice machine room, floor under storage shelves in the kitchen, dry storage room floor, floor under the cookline and food prep line, floor under the lamb skewer table, and hard-to-reach areas in the back of house. The facility has a pest control company providing monthly service. Ensure all pest control recommendations are followed and all holes are sealed. Clean and sanitize all food contact surfaces to prevent contamination.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Dirty cardboard is present on the side of the food prep cooler. Remove and ensure all materials in the kitchen are smooth, easy to clean and impervious to moisture.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The interior and exterior of the ice machine had an accumulation of dirt. This must be thoroughly cleaned and sanitized
