      • Observation (CORRECTED DURING INSPECTION):
      • Quats sanitizer concentration in spray bottle 50ppm.
      • At the time of inspection quats concentration from quats dispenser at the 3 compartment sink 50-100ppm.
      • Corrective Action(s): Ensure all food contact surfaces are sanitized frequently using a 200ppm quats sanitizer solution. All dishes, utensils, and equipment to be washed, rinsed, and sanitized with 200ppm quats for 2 minutues then air dryed. In the interim a 100ppm bleach sanitizer solution has been prepared. All dishes, utensils, and equipment to be manually warewashed and sanitized in 100ppm bleach for 2 minutes.
