- Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer was measured at 50 ppm in labeled spray bottle in back area. Sanitizer was measured at 400 ppm quats or greater at three compartment sink and in labeled spray bottle at front. Sanitizer product label states that product is to be diluted at 2 mL per litre of water (195 ppm active quats) for a no-rinse sanitizer. Note: Sanitizer was also tested with test strips on site. Sanitizer was recorded at 200 ppm in sanitizer logs.
- Corrective Action(s): Sanitizer was prepared at 200 ppm quats at time of inspection (in bottles and at rear sink). Test strips available on site are within expiry. Please ensure sanitizer concentration is maintained at 200 ppm quats for proper sanitizing. Please ensure directions are followed for use of test strips (e.g. immerse for 10 seconds).

- Observation (CORRECTED DURING INSPECTION): Internal temperature of taquitos in hot holding unit at 37 to 55 degrees C.
- Corrective Action(s): Taquitos were discarded by the operator at the time of inspection (27 total). The unit was at the wrong setting, according to the operator. Please ensure that all potentially hazardous foods are maintained at internal temperatures of 60 degrees C or more to limit the growth of potential pathogens and/or toxins. Unit is not to be used until it is able to maintain these temperatures.
