      • Observation: 1) Cleaning is required under the shelves in each aisle.
      • 2) Spilled mocha mix on one of the shelves in the back storage room.
      • Corrective Action(s): Removed all spilled food debris. Cleaning for under the shelves must be done at least once a week if not daily. Do not just sweep the debris from the aisles to under the shelves.

      • Corrective Action(s): This is unsanitary and may contribute to a pest problem. Discuss cleaning procedures with cleaning crew, and emphasize on importance of cleaning entire area, including hard to reach areas close to the perimeter and cracks/crevices.

      • Observation: Some droppings noted in the back of the dry storage area. Droppings appear to be old. Recent pest control reports did not mentioned about pest activity.
      • Correction: Remove droppings noted in the dry storage area. Areas affected by pest activity must be sanitized with 100 ppm diluted bleach solution ( or 200ppm QUATS) after cleaning to deactivate bacteria, viruses and phermone which may attract new rodents.

      • Observation: 1) Clutter noted in the last routine inspection was not addressed. Extra shelves (which requires assembly), ceiling materials, etc. in the dry storage may harbour pest. Moving some boxes revealed rodent droppings (see infraction 304)
      • 2) Splashed drink residues has not been cleaned up.
      • 3) Drink syrup spills noted in the dry storage area. Dry storage floor is sticky
      • Correction: 1) Organization is needed in the dry storage area. Remove items that are not required for day-to-day operation. All good must be 15cm off the floor to aid with cleaning and monitory pest activity

      • Observation: One of the fans on the walk-in cooler condenser was spitting out water in a projectile. Bottles and cans of drinks stored underneath. Puddle of water noted on the walk-in cooler floor. The operator reported that he noticed the problem starting last week.
      • Correction: Relocate the drinks underneath the condenser until the unit is serviced for the problem noted above. Clean and sanitize the canned drinks that were under the condenser.
