      • Corrective Action(s): Utensils must be stored in container with ice water to ensure temperature is always <4C. Operator added ice to the container of water holding utenils

      • Observation (CORRECTED DURING INSPECTION): sliced beef thawing in a basket at room temperature. Beef was taken out less tahn 2 hours ago.
      • Corrective Action(s): All potentially hazardous food are to be thawed under these conditions:
      • 1. using the microwave
      • 2. under cold running water in the preparation sink
      • 3. in a cooler at <4C.
      • Operator moved the thawing beef into a working cooler <4C

      • Observation: The bleach spray bottle in the cooking area was unlabeled.
