    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The sanitizer from the Ecolab dispenser had lactic acid, however the concentration was outside the proper range. Please consult with Ecolab technician. Chlorine solution was at 50ppm, it was corrected during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Boba pearls in the rice cooker was at 27C. They were cooked around 10am (greater than 2 hours in the Danger Zone). Operator was instructed to discard the pearls. Ensure the pearls are held at 4C (or less) OR 60C (or above). Should you decide to keep the boba pearls at room temperature, there must be signage by the pearls to indicate set out time and discard time.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Chlorine test strips expired in February 2025. Lactic acid test strips expired in 2022. Please obtain new test strips.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Ice machine had some buildup of calcium hardness and stains, please clean.

      • The chlorine/bleach sanitizer from the sanitizer pump is measured at 50ppm with chlorine/bleach test strips. Ensure that the pump is adjusted to maintain a concentration of 100ppm chlorine/bleach or is removed.

      • A wooden panel beside the two compartment sink was bare wood. Please repair or replace the panel to ensure it is smooth, impervious to moisture, easy to clean and in good repair.
