    • 37(1) If directed by an inspector, a food establishment must maintain records that demonstrate the quality assurance system used to ensure food safety in the processing or preparation of a food.
      • In accordance with Section 3.1.4 of the Nova Scotia Food Services and Food Retail Code, you must maintain records that demonstrate your Quality Assurance (Management) System, including the following: - Cleaning Schedule - temperature log (ensure entries are made without fail)

    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Ensure the hand wash station is accessible at all times.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Ensure equipment like the deli slicer are disassembled and cleaned and sanitized properly.

      • Clean and sanitize the areas affected by debris, dirt and grease build-up.

      • Clean and sanitize the areas contaminated by pest droppings; additionally ensure the cleaning tasks recommended by the pest control operator is completed.

    • 19(1)(b) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (b) that operations are carried out in an area of the food establishment that is sanitized and appropriate to the operation;
      • In accordance with Section 2.3 of the NS Food Retail and Food Services Code, you must keep all floors, walls and ceilings in food preparation, processing and storage areas in good repair. In accordance with Section 2.4.2 of the NS Food Retail and Food Services Code, you must ensure all floors are kept clean and in good repair.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Paper towel must be in a dispenser at the bar hand-wash station

    • 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
      • Grout observed damaged or missing in the dish pit area. Repair/replace grout so that floors are smooth, non-porous, and easily cleanable.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Hand wash sink in the bakery area observed blocked by a sheet pan rack and covered by a cutting board. Hand wash sinks must be accessible at all times to allow for proper hand washing practices. Sheet pan rack and cutting board moved at time of inspection.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Faucet at the hand wash sink in the bakery area not functioning. Repair faucet at the bakery hand wash sink so that it distributes hot and cold water under pressure.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • No paper towel dispenser available at the hand wash sink in the bar. Install paper towel dispenser at the hand wash sink in the bar to allow for proper hand washing practices.
    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • Paper towel dispenser at the hand wash sink in the bakery area observed empty. Restock paper towel dispenser.
    • 27(f) A food establishment must develop and demonstrate policies and procedures for personnel that ensure that a person entering a food handling area or engaging in an operation in a food establishment who comes into contact with food meets all of the following: (f) the person refrains from any behaviour or practice that risks contaminating food.
      • Staff member stated that glove changes are sometimes used in place of hand washing when the hand wash sink in not accessible. Hand wash sinks must be accessible at all times and be used for hand washing only. Gloves are not a replacement for hand washing. Educate food handlers of hand washing and proper glove use.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Debris build-up observed on the underside of the shelf next to the stove and the on the storage shelves next to the cold top reach-in cooler. Clean and sanitize shelving to remove debris build-up.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Food spills observed on the floor in the walk-in freezer. Clean floor to remove food spills.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Rodent droppings observed in the following areas: on the floor under the line prep room freezer, under the spray sink in the dish pit, on the bottom shelf in the bakery area, and in the storage closet where clean linens are stored. Clean and disinfect areas affected by rodent droppings.
    • 35(1) If directed by an inspector, a food establishment must have a quality assurance system in place that identifies, implements, monitors and verifies critical factors in the processing and preparation of food and that effectively prevents contamination or adulteration of food and ensures food safety.
      • Refrigeration and freezer temperature logs not completed for all units. Complete refrigeration and freezer temperature logs for all units at least once daily.
