      • Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had 0ppm chlorine residual for sanitizing at the start of inspection. Bottle of sanitizer was near empty.
      • Corrective Action(s): Operator replaced the sanitizer bottle for a new one and primed the line. Dishwasher now has 50-100ppm chlorine residual.
      • Ensure to always prime the sanitizer line when switching to a new bottle - this is to clear the line of the old product.

      • Observation: Rodent droppings and signs of activity observed in the following areas:
      • 1) Under the warewashing sinks - chewed insulation material
      • 2) Under the meat slicer table - droppings around the trap and scattered along the edges of the floor-wall junction
      • 3) In the storage closet - droppings around the fire extinguisher
      • 4) In the back room - droppings under the shelving racks, scattered along the edges of the floor-wall junction
      • Corrective Action(s): Remove droppings, clean and sanitize these areas with a strong bleach solution. Continue to monitor for new activity and potential entry points.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer bottle for the dishwasher was empty and DRY upon arrival. Operator was unsure if the unit is low temperature or high temperature.
      • Corrective Action(s): Staff located a new bottle of sanitizer at the time of inspection and dishwasher achieved 50ppm chlorine residual.
      • ALL DISHES, UTENSILS AND EQUIPMENT THAT WERE WASHED FROM PREVIOUS DAYS HAVE NOT BEEN PROPERLY SANITIZED.
      • ALL DISHES, UTENSILS AND EQUIPMENT THAT WERE USED FROM THE PAST 2 DAYS MUST BE SANITIZED AGAIN.

      • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): Handwash station in the kitchen is missing hand soap. Only dish soap is available here.
      • Corrective Action(s): Liquid hand soap was obtained from the back. Ensure ALL handwashing stations have liquid soap and paper towels at all times.
      • Proper paper towel dispensers must be installed. A stack of diner napkins is not a sanitary, long-term solution.

      • Observation: Rodent droppings observed in the following areas:
      • 1) Bottom shelf of the black shelving rack behind the front counter
      • 2) On the stainless steel table where the meat slicer is stored
      • 3) Behind the stainless steel table mentioned above
      • 4) On the bottom shelf below the flour bench, next to cutting boards
      • 5) On the floor in the corner under the yellow milk crates
      • 6) On the tray that is under the stacked plastic bins
      • 7) On the table next to the stack of plastic bins and food processor/vitamix
      • 8) Under the metal shelving rack next to the chest freezer
      • 9) Under all shelving racks in the storage closet
      • 10) In the back storage room by the exit - under the shelves, behind the laundry baskets along the wall, behind the cooler along the wall
      • Corrective Action(s): More cleaning is required throughout the entire facility. Pest proofing alone is not enough - you MUST follow up with regular and frequent cleaning.
      • Remove all droppings. Follow up the same areas with a strong bleach solution (approx 20mL bleach to 1L of water).
      • Consult with pest control company. Ensure there are no new entry points and all structural deficiencies are addressed.

      • Observation (CORRECTED DURING INSPECTION): Handwash stations in the kitchen and at the bar were not fully supplied at the start of inspection. Paper towel dispenser in the kitchen is empty and there is no alternative supply or method of hand drying. Soap is present at both sinks.
      • Corrective Action(s): Provide paper towels at both handsinks. Handwash stations must be fully supplied with liquid soap and paper towels. at all times.

      • Observation: Rodent droppings are observed in the following areas:
      • > Storage room by the back door - under the shelving rack
      • > Storage closet - under the racks, along the edges of the walls, on the bottom shelf of the wine rack
      • > Behind and around to the side of the unused chest freezer
      • > In the far corner under the 3 compartment sink
      • > Under the food prep table around the legs
      • > In the corner under the front counter and bar sink
      • Corrective Action(s): Remove all droppings. Stored equipment must be pulled away from the walls and off the shelves to facilitate cleaning.
      • Monitor for new entry points and seal immediately. Look for signs of activity such as chewed insulation material or wood chips and saw dust.
      • Consult with pest control.
      • Date to be corrected by: February 3, 2025.

      • Observation: 1 floor grate in the kitchen in front of the food prep table is not secured in place. This could be a potential entry point for rodents.
      • Unused wired racks stored underneath the shelf in the storage closet are creating clutter.
      • Corrective Action(s): Repair or replace the floor grate so that it is secured.
      • Remove unused equipment to minimize clutter. Clutter can contribute to rodent activity.

      • Observation: The ventilation hood grills have build up of grease.
