- Improper ice cream scoop storage and reprocessing. A single ice cream scoop was sitting out on a table in the booth at room temperature. The booth operator stated that he had been rinsing the scoop in the handwash station between uses.PHI explained that this was not suitable reprocessing.Discussed washing and sanitizing the scoop properly between uses or, if possible, having multiple utensils available.

- Clorox Clean-Up Disinfecting Bleach Cleaner Spray was present in the booth for sanitizing. This chemical is too strong for food contact surfaces and must not be used in these areas. It can be used for non-food contact surfaces (discussed with operators). The vendor will get a proper sanitizer solution from the main concession kitchen prior to food service.

- Vendor had a fully stocked hand sink in his booth and someone from the event organizer team took it away while the health inspectors inspected the neighboring food vendor. Vendor has put the request in for another handwash station. Vendor asked to wait to prepare and serve food until the sink arrives.

- Tasks were switched several times and handwashing was not observed. Handwashing requirements were discussed.

- The ice cream scoops were observed to be sitting out at room temperature on the table and were at risk of contamination. Operator was asked to sanitize the utensils and store them inside of the ice cream containers. Note: As per the Food Vendor information package, if hard ice cream is scooped, one of the following scoop storage methods can be used:o a continuous flow dipper well with 130 litre water holding tank, oro individual ice cream scoops for each flavour stored inside each individual ice cream container in the freezer, oro mechanical rinsing equipment.

- Operator was asked to move prepared lemonade cups to a protected/covered area in lieu of leaving them out on the table. Operator moved them to a covered cooler with ice.

- It was noted the lemonade was being prepared on the floor of the main concession kitchen. This was corrected by providing a trolly for the volunteer to use to keep the container off the ground.

- At the time of the initial inspection, there was no hand sink present. Operator was able to set up a temporary hand wash station with soap and paper towel. Note that operator was asked to acquire a proper holder for the paper towel.

- The operator had their dog tied up in the food preparation area. The dog was tied to a new, more appropriate location at the time of inspection. Please remember that animals are not permitted in food preparation areas.

- Operator had filled out the notification form and linked the food service with the LSA Main kitchen. They were asked to complete a separate form for this booth as it is operating outside and independant of the main kitchen in a temporary booth.
