    • Improper Construction / Maintenance of Establishment
      • 1. water leaking / dripping observed from the drain pipe of the mobile trailer. Ensure the source of the leak is repaired prior to operation. Corrective action completed, the drip was due to an open valve not equipment issue. 2. Thoroughly clean the facility, including the Shawarma grill, griddle and deep fryer prior to operation.
      • Comments Mobile facility was closed for operation and preparing for opening in the Summer market season.. Operator indicated that the mobile was mostly operating at the CR Farmers Market in Spirit Square. General Comments: - Wooding counter tops were replaced with stainless steel counter tops. - New desktop cooler was added to the mobile trailer couple years ago. NOTE: Ensure only potable water grade hose is being used to fill water into the potable water tank. - Clear two cooler was malfunctioned and removed from the trailer. - Operator is proposing to add in another cooler for larger event operations. - Most of the food preparations are completed at the restaurant and transferred to the mobile trailer. Ware-washing ins usually completed at the restaurant's 3-compartment sink after operation. - Hand washing sink fully supplied with hot and cold running water, paper towels and liquid hand soap will be added later. - All coolers were at or below 4°celsius and all freezer was below -18°celsius. - Oven was not being used and removed from the trailer.
