- Mouse dropping are present on the floor, shelving and on container lids in the kitchen. Containers in the kitchen were opened, and no dropping is noted. Action shall be taken to clean and sanitize all shelving, containers and floor. Pest control measures shall be implemented, including determining entry points, setting traps and establishing regular inspections for pests.Aug 21- The operator only placed 2 sticky traps out overnight. Multiple traps are required to identify where the mice are coming out and to capture them. During the inspection, the operator went out and purchased more traps.Aug 22- The operator made significant improvements in cleaning up the droppings. Additional action is required in the dry storage room and mixer room.A pest control map was developed indicating where traps are to be place and checked daily. Any caught mice shall be recorded.Aug 25- The pest control map was not fully followed, as traps were not placed in Mutiple locations or as directed against the wall. The pest control plan shall be followed and the finding emailed to the inspector.

- 1)The walk in cooler was 9C. Ice was present on the air blowing unit in the walk in cooler as well as on the condenser onto of the cooler. Action shall be repair/replace the refrigeration equipment.2) Chicken was being thawed on top of a freezer uncover. Meat shall be thawed in a cooler or water bath. The meat shall be moved to an acceptable location. A proper cover shall be over the raw meat to help prevent cross contamination.

The manual method for dishwashing using the 3 compartment sink is to 1)Wash in Hot Soapy Water 2) Rinse all soap in the second sink, and 3) Sanitizer in 100ppm Chorine or 200ppm Quats.The dishwasher is reportedly scheduled to be hooked up later this day. All dishwash ware shall be sanitized before use.
