- Observation (CORRECTED DURING INSPECTION): One container of QUATS sanitizer was 100 ppm. Staff stated that the container of sanitizer was prepared yesterday.
- Corrective Action(s): The container of QUATS sanitizer was immediately discarded and refilled with fresh sanitizer solution, and measured 200 ppm when retested during the inspection. Ensure that QUATS sanitizer solution is maintained between 200-400 ppm QUATS in order to effectively reduce pathogens present on food contact surfaces.

- Corrective Action(s): 1. Staff immediately refilled the paper towel dispenser during the inspection.
- 2. Staff turned the hot water back on at handsink located at the entrance of the kitchen.
- Please ensure that hand washing stations are fully supplied with hot and cold running water, liquid soap, and paper towels at all times to allow for proper employee hand hygiene.

- Observation (CORRECTED DURING INSPECTION): Chili and garlic butter probed at 55C and 47C in the left hot holding unit. Foods were placed in units over 2 hours ago.
- Corrective Action(s): Staff discarded chili and garlic butter during inspection. Hot holding unit turned up during inspection. DO NOT lower the settings as all hot potentially hazardous foods must be displayed at 60C/140F or hotter. This is a repeat violation - continued non-compliance may lead to further enforcement.
