Keep area clean and clear of clutter to prevent harbourage areas for pests. Clean above noted area of the floor to remove droppings and sanitize affected area with a bleach solution.

      • Observation (CORRECTED DURING INSPECTION): A) Noted a few sanitizer containers in the kitchen were at 50ppm quat. The container beside the hand sink across from the dishwasher had some food debris in it.
      • B) Did not detect any sanitizer in glass washer. Sous chef on duty primed the unit, 100ppm chlorine sanitizer solution was detected. Glass washer was checked in the morning as per the logs but the afternoon check was not yet done.
      • Corrective Action(s): A) Ensure sanitizer solution is changed routinely to maintain minimum. Ensure solution is changed when it is murky or contains food debris.
      • B) Ensure glass washer is primed properly and monitoring is done as per the corporate sanitation plan.

Hand sink at the bar was blocked with an empty container and the strainer tray was pushed to the back of the hand sink where hand washing would take place. Note: the hand sink at the bar is also the dump sink.
      • Corrective Action(s): Ensure hand wash stations are unobstructed at all times. Do not cover hand sink with equipment. The strainer tray at the bar hand sink should be pushed up to the front of the hand sink so that the faucet can be used to wash hands at the back of the hand sink.

      • Observation: Noted several hot foods being cooled in the walk in cooler - temperatures ranged between 50C to 28C. Noted staff member about to put cooked chicken at 78C into walk in cooler. This issue has been noted on previous inspection. Discussed proper cooling with general manager on duty. Manager on duty confirmed that she had checked temperatures in the morning and the walk in cooler was at 40C. Ambient air temperature of front of cooler was at approx 7C at time of inspection - the back was 5C. No concerns with internal temperature of foods that were stored in the walk in cooler over night. Monitor cooler and do not store perishable foods in unit unless able to maintain 4C or less.
      • Corrective Action(s): Reviewed proper cooling procedures with staff and manager on duty. Do not store hot foods in cooler unit to cool immediately. Ensure foods are cooled from 60C to 20C at room temperature. Do not exceed 2 hours at room temperature. Use trays and shallow containers, ice baths..etc to facilitate cooling at room temperature. Discussed options for ensuring adequate counter space is available to properly cool foods (ie. food prep shifts, multi tier rolling rack..etc). After cooling at room temperature the foods can be transferred to a cooler unit to cool from 20C to 4C within 4 hours. Discussed options for possibly using walk in bar/drink cooler for cooling the foods provided that there is enough space and no food contamination during transfer (ie. smaller multitier rolling racks, covers for rolling racks during transportation but not during storage in cooler units...etc).

      • Observation (CORRECTED DURING INSPECTION): Noted foods in walk in cooler steaming at time of inspection. Cooked pasta approx 25C, fennel sausage approx 80C, corn approx 40C, and sushi rice approx 40C were cooked and being cooled. Staff member on duty said she didnt have enough counter space to cool the foods at room temperature. Temperature of the walk in cooler near the hot foods was 8C but the temperature in the back of the cooler and internal temperature of the foods that have been stored in the cooler unit over night were 4C or lower.
      • Corrective Action(s): Reviewed proper cooling procedures with staff and manager on duty. Ensure foods are cooled from 60C to 20C at room temperature. Do not exceed 2 hours at room temperature. Discussed options for ensuring adequate counter space is available to properly cool foods (ie. food prep shifts, multi tier rolling rack..etc).
