    • Improper Construction / Maintenance of Establishment
      • Floors and walls, especially behind the dishwasher were accumulating grease and debris.
      • Ensure to deep clean and get rid of the grease accumulation. Comments Hand sinks were stocked with soap, hot water and paper towel. Dishwasher registered 100 ppm chlorine. Glasswasher was tested at 25 ppm. Coolers and freezers were maintained below 4°C and -18°C. Temperature logs and sanitation logs were adequately maintained. Hot held foods were above 60°C. Storage of foods inside walk-in was adequate. Sink and sani was tested to be at appropriate concentration. Overall, premises was maintained in sanitary condition except for above mentioned area. Previous pest report indicated no concerns.
