    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The bleach solution was noted to be very strong at the time of inspection. Please ensure that the bleach solution is maintained at 100 ppm at all times. Please use a bleach test strip and ensure it is maintained at 100 ppm at all times.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 1. It was noted that the operator was unaware of proper manual dishwashing procedures. Proper two compartment dishwashing procedures were discussed with the operator during the inspection. Please follow following procedures:- wash with soap and water and rinse with clean water in the first sink. - the operator indicated that they would use bleach solution for sanitizing dishes. Please prepare a bleach solution at 100 ppm in the second sink. Leave clean dishes fully submerged in the bleach solution for at least two minutes. - Air dry dishes.2. The dishwashing sinks were noted to be very small. The dishes were noted to be larger. The operator indicated that she would acquire smaller dishes. Please be advised that all dishes must be able to fully submerge in the dishwashing sinks.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • A paper towel dispenser was not observed. Please acquire a paper towel dispenser.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • The hand washing sink was noted to be made of ceramic.Please install non corrodible metal sink.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Multiple cabinets were noted to be peeling. Please paint all peeling cabinets.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • General cleaning is required in the facility. Pleas clean the facility thoroughly and ensure it is maintained in a sanitary state at all times.
