      • A thermometer was not available for high temperature dishwasher.ACTION:1. Ensure a waterproof min/max thermometer is available on site and used to verify dishwasher final rinse temperatures (71C).2. Ensure dishwashing temperatures are monitored and recorded daily.

      • Cold holding temperatures were satisfactory with the exception of the back walk-in cooler. Coolers were measured below 4C. Freezers were measured below -18C.Hot holding was not observed. Ensure hot foods are held above 60C at all times. Reheated foods must reach an internal temperature of 74C before hot held.It is strongly recommended to monitor and record cooler and freezer temperatures daily.1. Back walk in cooler was measured at 12C. No perishable foods were stored in this unit at the time if the inspection.ACTION:Please ensure cooler is repaired and maintained at a temperature of less than 4C.2. No probe thermometer was available.ACTION:Ensure a probe thermometer is available on site and used to verify internal cooking temperatures.
