- Observation (CORRECTED DURING INSPECTION): Various potentially hazardous food items found to be at temperatures of greater than 4 degrees Celsius.
- Cooler is currently malfunctioning and found to be at ambient air temperatures of 17 degrees Celsius
- Food items such as eggs, sausage, sauces, aioli, etc. found to be at temperatures of 12 -13 degrees Celsius. Food items had been in cooler for approximately 3 hours.

- Observation: Hot water handle on coffee station hand sink is not functional. Handle continues to spin without water coming out. Only cold water handle is currently working.
- Maintenance has been notified and part has been ordered but finding it difficult to locate part. Maintenance has changed the mixing valve of the cold water such that hot and cold water are now mixed. Temperature coming out of cold water tap is now 38 degrees Celsius.
- According to US food code temperature of cold water to achieve 38 degrees Celsius for fats to be removed from hands (2023 newer US food code states 29.44 degrees Celsius)

- Observation (CORRECTED DURING INSPECTION): 1) In smoothie station cut fruit observed to be placed in metal inserts inside ceramic inserts. This creates an insulation that is a barrier to cold air reaching the fruit. CORRECTED DURING INSPECTION - Staff transferred fruit from metal inserts into ceramic inserts so that cold air could reach container directly.
- 2) In sandwich cooler insert two inserts were placed above and on top of upper inserts instead of inside the unit where inserts hang. CORRECTED DURING INSPECTION - staff removed the two inserts and placed into adjacent cooler unit
- 3) In hot holding macaroni and cheese station lettuce and cut vegetables stored incorrectly in ice bath. The insert was not fully submerged in the ice and ice did not have any liquid. CORRECTED DURING INSPECTION - Insert containing vegetables was placed inside a larger ice bath, with some liquid, that allowed for greater contact of cold with the insert.

- 2) Ensure inserts are not stored hovering above insert hanging area to ensure cold air can reach food items
- 3) Ensure ice baths are used properly. Ice baths are NOT recommended as they do not keep food cold. Discussed with Management. Food items are discarded after 2 hours and not placed back into cooler unit if any leftovers after lunch.

- Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food items stored in display cooler not maintained at temperatures of less than or equal to 4 degrees Celsius.
- Temperatures of food items increased from lower portion of cooler unit to upper portion. Sandwiches temperature probed in middle of display cooler had an internal temperature of 9-10 degrees Celsius.
