      • - 2x cooked chicken legs inside a hot-holding unit probed at 56C. The ambient temperature of the hot-holding unit measured at 61C.
      • Corrective Action(s):
      • - Staff discarded the 2x chicken legs as it has been below 60C for more than 2 hours.
      • - Ensure the internal temperature of the whole chicken is checked with a calibrated probe thermometer before portioning and placing into a hot-holding unit. Whole chicken must reach an internal cooking temperature of 82C.
      • - Maintain a temperature log for the cooked whole chicken.
