      • Observation: - Noted raw fish stored above cooked foods in walk in cooler
      • -Noted some dirt/ possible mold under lid of ice machine- not touching ice - did not open the cover plate
      • Corrective Action(s): -Ensure to store all raw animal products in lower shelf or designate one side shelving unit to only raw meat products
      • -Drain and clean and sanitize inside the ice machine -open the cover plate and do full clean up for inside the ice machine

      • Observation: Biofilm build up observed in the top compartment of ice machine.
      • Corrective action: discard the ice, thoroughly wash/rinse/sanitize (using either QUAT @ 200ppm or Chlorine @ 100ppm) and let air dry. Ensure the top component is routinely cleaned.

      • Observation (CORRECTED DURING INSPECTION): Cleaning rags observed on food prep surfaces (not stored in a sanitizer solution). The moist rag in addition to collected food debris can promote microbial growth.
      • Corrective action: Store all cleaning rags not in immediate use in a sanitizer solution (Chlorine @ 100ppm --> 1/2 cap of bleach per L of water) and replace solution at most every 2 hours.

      • Observation (CORRECTED DURING INSPECTION): Concentration of QUATS in sprayer bottle was 50ppm and was 100ppm at dispenser. A minimum of 200ppm of QUATS is required for sanitizing food contact surfaces.

      • Correction: Call ECOLAB to re-calibrate sanitizer dispenser. In the meantime, use chlorine bleach (100-200ppm). Use (1 tablespoon) of 5% unscented bleach per (1 gallon) of water. Operator mixed bleach solution at time of inspection . Purchase test strips.

      • Observation: 1) Accumulation of grease underneath deep fryers. Grease build-up can lead to pest infestation and increased risk of fire.
      • Date to be corrected by: 1 week
      • Correction: Make sure that the sides of the fryers and walls behind and floors underneath are cleaned on a regular basis. Clean immediately and increase frequency.
      • 2) Plastic pallet on floor in walk-in freezer was showing signs of debris build up. Floors must be able to be cleaned regularly and pallet is acting as a floor.
      • Correction: Replace the pallet with a new one that is smaller or provide some alternative means for keeping the frozen fish off of the cooler floor that can be moved for cleaning.
