      • There was a sewer odour in the pot washing area. Please ensure drains and grease trap are cleaned as needed. Ensure there is a proper seal around the grease trap.

      • Spray bottle containing Oxivir Tb (not foodgrade) was used in the kitchen among food. Staff immediately removed. Please use quat sanitizer provided.

      • The hand sink in the pot washing station was not draining properly (very low drainage) and the sink was not properly secured to the wall. Please repair.

      • Soap dispenser was empty at bakery hand sink. Please ensure hand sinks are properly supplied with hand soap and paper towels (corrected).

      • Recurring violation:The washroom door was opened and the washroom is adjacent the kitchen.Although the washroom door was equipped with a self-closing device, however the self-closing device was not working and the door is not capable of closing on its own. Previous violation:The washroom doors were not equipped with a self-closing system. The inspector informed the staff/operator that washrooms in the facility must be tight fitting and equipped with a self-closing door.**EQUIP THE WASHROOM WITH A SELF-CLOSING DOOR.**Jan 14, 2026: Manager indicated this bathroom was for inmates and was supposed to be locked as it was not used by staff, however, inspector observed staff entering to use bathroom. This bathroom did not have any hand soap nor paper towels. If bathroom cannot be properly maintained with hand soap and paper towels at hand sink and door cannot be kept closed (even when not in use), please lock bathroom and discontinue use. Inmates can use alternate bathroom and wash hands at designated hand sink before resuming food handling. Bathroom can be converted to staff use but keep door closed even when bathroom not in use and supply hand sink with soap and paper towels in suitable dispensers.

      • 1) There was a hole in the wall opposite from doors FS04 and FS05. Please repair so area is smooth, nonporous and easily cleanable.2) Portion of wall trim above the bakery cooler was missing. Please repair.3) The ceiling/grate area above the pot washer was dripping. Please repair.

      • 1) There was a buildup of grime along floor wall joints throughout the kitchen. Please clean. Recommend obtaining appropriate floor cleaning chemical for removal.2) There was an accumulation of dirt under the single sinks along the front prep line. Please clean.

      • Baking program:Moldy food was found on the top shelf of the baking program cooler (Cooler 4).Discard the moldy food and deep clean and sanitize cooler 4.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The faucet at the vegetable sink was dripping water.Fix the faucet.

      • The soap dispenser at the handwashing sink at the prep line was empty.Additional soap was available and the soap dispenser was promptly restocked.Ensure the handwashing sinks are equipped with handwashing supplies at all times to facilitate hand hygiene.

      • The paper towels of the handwashing sinks of the two washrooms were not placed in a functional dispenser. The inspector informed the operator that all paper towels must be placed in a dispenser to ensure that the unused portion of the roll is protected from contamination. **PUT PAPER TOWELS IN A FUNCTIONAL DISPENSER.
