- Observation(s): The cookline prep cooler was undergoing a manual defrost due to the refrigeration coils icing up frequently. Staff were moving food out of this cooler and into the walk-in cooler.

Replace contents of the spray bottle with an approved sanitizer such as bleach at 100ppm (1/2tsp/1L water).

Refer to the operation manual for the appropriate cleaning and sanitizing directions.
