      • Observation: (1) High temperature dishwasher final rinse cycle measured at 67.9C (minimum 71C) at the dish level. Vice principal indicated the unit will need replacement and has been quoted for a new dishwasher.
      • (2) New hot holding unit still not installed.
      • Corrective Action(s): (1) Continue to manually sanitize dishware/utensils in 100ppm-200ppm chlorine solution. Provide order invoice and installation timeline of new dishwasher to inspector.

      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher final rinse cycle measured at 66.8C at the plate level.
      • Corrective Action(s): Manually sanitize dishware/equipment in the dishwashing sink. Manager prepared a bleach sanitizing solution during the inspection - measured at 100ppm.

      • Observation: Some food debris observed on the meat slicer. Operator stated they do not use the equipment and that it was used by the previous operations/business.
      • Corrective Action(s): Remove item off the premises. If the slicer is to remain on-site, the operator is responsible for maintaining it in a sanitary condition. Equipment must be properly cleaned and sanitized to prevent attraction of pests.

      • (2) Middle hot holding unit broken (not currently in use). Left hot holding unit measured at 40C (no food was placed inside yet).
      • Corrective Action(s): (1) Repair/replace high temperature dishwasher to operate with a minimum final rinse temperature of 82/180F. Temperature at the plate level must achieve a minimum of 71C/160F.
      • Correct by: Immediately.
      • (2) Left hot holding unit was turned up to to the maximum and meaured at 64C. New unit available on-site but not installed yet. Please install new unit.

      • (3) Exposed walls and insulation in office. Manager stated it was from the water damage and that they are waiting on repairs.
      • Corrective Action(s): (1) Replace ceiling tile. Pop loose ceiling tile back in.
