The operator must obtain test strips to verify the correct concentration of sanitizer (200ppm). F2.1B: All fridges must must be equipped with a thermometer to monitor temperatures.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.

      • Observation(s): Ammonium chloride sanitizer test strips were not available at the time of inspection. The operator will obtain test strips to verify the correct concentration of sanitizer (200ppm)
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Sanitizer concentration was not adequate from the sanitizer dispenser used in the spray bottle. Sanitizer must be mixed manually until the dispenser can adequately dispense the correct concentration of sanitizer. Ammonium chloride sanitizer is being used, the concentration must at least 200ppm. The operator must verify with appropriate test strips if sanitizer is at 200 ppm minimum.
