      • Observation (CORRECTED DURING INSPECTION): Sanitizer not available to sanitize food contact surfaces. Operator made 100 ppm chlorine water sanitizer at the time of this inspection and provided in Bakery front and back. 1/2 teaspoon house hold bleash in one litre of water is to be made as sanitizer for food contact surfaces. Ensure to test the chlorine residue and it should be 100-200ppm.
      • Corrective Action(s): Obtain proper sanitizer's test strips respective to chemical used as sanitizer so that chemical concentration can be tested and verified.
      • Please Follow your sanitation plan and ensure sanitizer is always available.

      • Observation:
      • 1- Finishing on the floor has peeled sections throughout the premises specially in front of proofer, under tables.
      • 2- Equipment accumulated food debris and it appears not be cleaned for a long time.
      • 3- General wear and tear on shelves, and surfaces that make them hard to clean.
      • 4- Baking material and icing are left on the equipment.
      • 5- Extensive food debris and dust accumulated under dry storage section near staff washroom.
      • Corrective Action(s):
      • 1- Repair and maintain floor finishing so that it is easy to clean. Repair floor finishing under the 2-compartment sink. Repair or Replace baseboards so that they are cleanable.
      • 2- Follow cleaning and sanitation plan for baking equipment as well as for general sanitation of the store.
      • 3- Repair or replace shelving that have exposed wood. Shelving must be easily cleanable. Follow the sanitation plan to clean the shelves in regular basis.
      • 4- Ensure equipment are free from baking material such as icing. Clean and sanitize equipment as needed. Ensure sanitizer is available at all time.
      • 5- Clean and remove all food debris from under the tables everywhere in the bakery. Pay attention to dry storage under the flour shelf, front customer area and where the baking pans are stored.
      • - Ensure cleaning on door handles, door seals and frames on walk-in freezer and walk-in cooler.
      • - Remove unnecessary items from the shelving so shelving surfaces are easy to clean.
