      • Observation (CORRECTED DURING INSPECTION): Fresh To-Go display cooler measured at 4 to 8C using a calibrated probe thermometer. The top shelf is operating at a 4C or below, the lowest shelf is operating at 8C.
      • Corrective Action(s): Ensure cold potentially hazardous foods such as sandiwches and cheese sticks are moved to the upper two shelves to maintain 4C or below. Have a technician come in to take a look, once the issue is resolved contact the health inspector. Continue to monitor the temperature and ensure that potentially hazardous foods are maintained at 4C or below. Operator can move the food to a working cooler. Food stored above 4C within 2 hours must be discarded.
