    • 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
      • Install screens to prevent pests from entering through the personnel door and the serving window.
    • 19(2)(a) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:     (a) a supply of potable hot and cold water at adequate pressure and volume with the appropriate facilities to store and distribute the water and to control the water temperature;
      • The facility did not have a supply of hot water. The facility also had a limited supply of cold potable water on site. The facility must have a supply of hot and cold water on site at all times during operation.
    • 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
      • The hot holding table was measured at 40 Celsius during the 30 minutes the inspection took place. Hot holding potentially hazardous food items (cooked vegetables, rice, or cooked protein) must be at a minimum temperature of 60 Celsius or greater. Verify that the hot holding unit is at 60 Celsius or greater each day with a probe thermometer and record these temperatures in a temperature log to prevent temperature abuse. Record these temperatures twice daily.
