- Observation: Drain plugs not available in sink at the time of inspection, indicating that the 3 compartment sink method not properly utilized. Corrected during inspection - drain plugs placed in sink. EHO reviewed 3 compartment sink method with operator during inspection. Final step involves soak clean dishware in sanitizer solution for at least 30 seconds.
- Corrective Action(s): EHO to provide operator with 3 compartment dishwashing method poster. Drain plugs must always be in the sink. Operator to review procedures on how to wash, rinse and sanitize dishware and review/update sanitation plan as necessary.
