   • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
     • The mechanical dishwasher is unserviceable. Due to the increased workload placed on staff and existing infrastructure at this location, the dishwasher will be required to safely clean and sanitize dishware for use during preparation for the government school lunch program and the ongoing cafeteria activity. Repair the existing mechanical dishwasher or replace it.
