- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Quaternary ammonium solution was measured to be 400ppm at time of inspection. Test strips that were available expired in 2021. Solution was diluted to 200ppm at the time of inspection. Obtain new test strips.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- There is inadequate cooler space in this facility. To safely thaw foods there should be sufficient cooler space to allow for separation of cooked and raw foods. overcrowding of a cooler inhibits proper airflow and reduces the effectiveness of the cooler. Obtain another cooler to ensure there is adequate space for thawing and food is not overcrowded. The wall behind the 3 compartment sink and the cupboard doors are in disrepair and can absorb moisture. Photos will accompany this report.The wall must be repaired. Cupboard doors should be repaired or replaced.
