- Observation (CORRECTED DURING INSPECTION): Pot of gravy sitting in hot holding unit measured at 50C. Operator stated it was placed directly in hot-holding from refrigeration 45 minutes prior to inspection, without a reheating step.
- Corrective Action(s): Operator reheated the gravy to 74C in microwave, then transferred it to the hot-holding unit to be kept at or above 60C during the inspection. Please ensure all foods are reheated to 74C prior to hot holding.
