- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The high-temperature dishwasher was not reaching the required 71°C at the plate during the inspection. As demonstrated at the time, if the hot water tank is not set to its maximum temperature, the dishwasher is unable to achieve the required sanitizing temperature.My understanding is that the dishwasher relies on the incoming hot water being supplied at the highest available temperature and then boosts that temperature by an additional approximately 20°C to reach the required final rinse temperature.During the inspection, staff adjusted the hot water tank to its highest setting, and the dishwasher temperature began to increase. However, there was insufficient time to allow the hot water tank to fully recover and reach its maximum operating temperature to verify that the dishwasher would consistently achieve the required 71°C at the plate.As an interim measure, I showed staff how to prepare a bleach-water sanitizing solution as an alternative sanitizing method until the dishwasher is operating as intended.As discussed, please purchase a max/min thermometer to verify that the dishwasher is functioning as intended and achieving the required temperatures.

- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- The facility was observed to be clean and well organized at the time of inspection. I was pleased to see the improvements that have been made to the storage area, as well as the new opening between the gas station convenience store and the restaurant. These changes should help improve workflow and accessibility between the two areas.At the time of inspection, the wall around the new opening was still unfinished. Once completed, the wall will need to be finished with a smooth, impervious surface that can be easily cleaned.Please let me know when the work has been completed, and I will be happy to update my report to reflect these improvements.
