- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The dishwasher has a maximum temperature of 60C at the dish level. The sanitizer cycle shall be 72C at the dish level. Action shall be taken to repair the dishwasher. The temperature reading on the display indicates greater than 180C. Until the dishwasher is repaired, dishware shall be washed and sanitized manually.
