      • Food handlers onsite indicated that a meat sauce stored onsite was prepared from a home-based kitchen. There is no record of permitting for the source of sauce prepared. As this trailer is a permitted food establishment, all foods served must be from approved sources. Unapproved home-prepared foods are not permitted. Ensure that all foods served at future events are prepared from permitted establishments or otherwise approved sources.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The sanitizer available for use was measured at a concentration of 0ppm chlorine.Sanitizer was corrected to 100ppm during inspection. Ensure that sanitizer concentration is verified prior to use at events.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips to verify the concentration of chlorine sanitizer in use were not available onsite. Acquire suitable chlorine test strips.

      • The countertop to the right of the cooking area has exposed seams along the top and sides of the food preparation surface. This makes cleaning and sanitizing of this area more difficult. Repair or replace surface to render this surface smooth and easily cleanable.

      • **Outstanding violation from 07/2021Raw porous wood was exposed underneath the handwashing sink in the main trailer. -Apply a proper finish-Ensure the surface is made smooth, non-absorbent to moisture, and easily cleanable.
