- Operator indicates that the foods have been out since 8am and taken down at 10am however they are then put back in the fridge for use the next day
- Corrective Action(s): Ice tables are not a substitute for mechanical refrigeration as temperatures are typically not maintained at or below 4 deg C. Any potentially hazardous foods out there more then 2 hours must be thrown out NOT put back in the fridge

- Observation (CORRECTED DURING INSPECTION): Bottom display cooler is measured to be 4.9oC (air temperature). Thermometer in cooler indicated temperature over 4oC also. Top compartment (with a lid) is measured to be 3.2oC, but nothing is stored in here. Only prepackaged salads and sandwiches are in cooler. Lunch is only from 11:30am-1:30pm.
- Corrective Action(s): Use top enclosed compartment as storage, and do not use bottom compartment until adjusted/fixed. This could possible due to the compartment being completely open. Salads and sandwiches will be discarded at 1:30pm.

- Observation: 1. Hand washing sink near grill area was used to for food prep of batter during service. Do not use hand sink for any kind of food preparation. Use the prep sink. Hand washing sinks are contaminated. (CORRECTED AT THE TIME OF INSPECTION)
- 2. Food storage room bins have inserts for scooping food, such as the white flower container on wheels. Inserts are covered in food and should not be used to scoop food to prevent contamination.
- Corrective Action(s): 1. Do not use handwashing sinks for food preparation. Hand washing sinks are only for handwashing. Use the prep sink for all food preparation. Discuss and educate staff on this requirement. Correction required immediately.
