      • Validate your jarred product recipes via third party testing and review at an approved lab. Provide a report indicating whether the recipes that were submitted are acceptable to produce a safe food product. The report must indicate any parameters that require monitoring to ensure compliance, such as pH, water activity, additive levels, and time/temperature, and must include accredited lab results. Products identified for testing include: -Mustard Pickles -Chow Chow -Bread and Butter Pickles -Relish -Deli Pickles -Any other product that is jarred/canned in-store and sold as shelf-stable.
    • 47(1)(a) An operator must ensure that all food in the food establishment is (a) labelled and identified as being from a source that is subject to inspection; or
      • Improperly labelled fish products from third party vendor removed from sale until CFIA compliant labelling is provided by the supplier.

    • 19(1)(a) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (a) that the risk of contaminating the food is minimized;
      • Install a self-close mechanism on the staff washroom door which opens directly onto the meat processing area.
    • 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
      • In accordance with Section 2.17 of the NS Food Retail and Food Services Code, you must ensure exterior openings are protected against the entry of pests. Keep the side door shut to prevent the entry of flies. Flies observed in the facility.
    • 23(2)(b) Equipment used to cook, heat-treat, cool, store, display or freeze food must be designed to (b) control temperature, humidity, air flow and any other condition that is likely to have a detrimental effect on food safety.
      • Repair the door to the walk-in freezer.
    • 28(3) A person in a food establishment who comes into contact with food must be trained or instructed in food hygiene to a level appropriate to the activity that the person performs.
      • In accordance with Section 6.1 of the NS Food Retail and Food Services Code, you must ensure food handlers have the necessary knowledge and skill to enable them to handle food hygienically. Provide additional training to staff on: appropriate methods of storing foods (off the floor, do not overload coolers), cleaning/sanitation procedures (which products to use, when, how to prepare), pest prevention (keep doors shut to prevent pest entry).
    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • Cleaning and sanitation procedures updated to include additional sanitizing before the start of food handling, given the presence of flies, and every 4 hours in accordance with the NS Food Retail and Food Services Code Section 4.2.3.
    • 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
      • In accordance with Section 4.2.1(b) of the NS Food Retail and Food Services Code, you must identify all cleaning and sanitizing agents used in the Food Establishment and their concentrations. Ensure that each sanitizer spray bottle and cleaner spray bottle is labelled with their contents and mixture amounts.
    • 30 An operator must ensure that all food in their food establishment is obtained from a source that is subject to inspection or is food that is exempted by these regulations.
      • In accordance with Section 3.2.1.1 of the Nova Scotia Food Services and Food Retail Code, you must have food obtained from inspected and approved sources only. Preserves/pickled products from uninspected source removed from sales floor to be returned to supplier.
    • 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
      • In accordance with Section 3.3.3 of the Nova Scotia Food Services and Food Retail Code, you must store potentially hazardous foods at a temperature of 4 degrees Celsius or less Ensure that foods stored in the display coolers are not overstocked, so that they remain safely within the coolers air curtain to maintain 4C or colder.
    • 49(1)(a) An operator must ensure that food ingredients and food packaging materials must be stored in a dry storage room or designated area that a) protects the food ingredient or food packaging material from contamination;
      • In accordance with Section 2.9 of the Nova Scotia Food Retail and Food Services Code, you must ensure stored items are protected from contamination such as water leakage, pest infestation or any other unsanitary condition by storing foods off the floor on racks, shelves, or pallets. Ensure that foods stored in the walkin freezer are off the floor on racks, shelves or pallets.

    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must: store all food and food items a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets; store all food and food items a minimum of 5 cm (2 in.) from the walls. Ensure all foods and food storage containers and kept off the ground.
    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • In accordance with Section 4.2.1 of the NS Food Retail and Food Services Code, you must demonstrate that a written sanitation program is in place, which: a. Outlines the parameters to be controlled in the food premises to ensure safety of the food product. b. Includes sanitation procedures for equipment, utensils or refrigeration units that impact on food safety, which must specify: i. areas, items of equipment, and utensils to be cleaned; ii. the designated food handler(s) responsible for the cleaning and sanitizing; iii. the chemicals and/or cleaning products (including concentrations) and process to be used; iv. the procedures used; v. the frequency of cleaning and sanitizing; and vi. inspection and monitoring records. c. Documents that the sanitation program is monitored and its effectiveness verified. d. Reflects the level of risk of the food products as determined by the management plan required in Section 3.0 of this Code.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Ensure all staff are aware of the cleaning and sanitizing procedures and that a food grade sanitizer (bleach) is used often.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • In accordance with Section 4.2.2 of the NS Food Retail and Food Services Code, you must ensure non-food contact surfaces of equipment must be cleaned at a frequency that will prevent the accumulation of dust, dirt, food residue and other debris. General cleaning needed in the following areas but not limited to: walk-in cooler door, walk-in cooler area under / behind meat grinder, under meat cutting prep tables.
    • 9(a) An operator must renew a permit, other than a temporary permit, on or before the expiry date by submitting a completed renewal application to the Minister on a form approved by the Administrator together with all of the following: (a) the applicable fee prescribed in Section 5;
      • A food safety permit renewal form for an eating establishment must be submitted on or before the expiry date of the of the permit. Ensure the food safety permit is renewed.

      • In accordance with Section 2.3 of the NS Food Retail and Food Services Code, you must ensure walls and ceilings are constructed of finishes which are smooth, impermeable, and washable. In accordance with Section 2.4.2 of the NS Food Retail and Food Services Code, you must ensure all floors are durable, easily cleanable and non-slip. Tiles / floor to be replaced in second floor of the walk-in cooler. This item was listed as a violation on the previous report. A warning report has been issued for Section 19(1)(C) of the Nova Scotia Food Safety Regulations.

      • In accordance with Section 2.3 of the NS Food Retail and Food Services Code, you must ensure walls and ceilings are constructed of finishes which are smooth, impermeable, and washable. In accordance with Section 2.4.2 of the NS Food Retail and Food Services Code, you must ensure all floors are durable, easily cleanable and non-slip. Tiles / floor to be replaced in main food processing area in the back. The space was opened up recently but must have tiles installed to ensure a smooth, impermeable, and washable surface.

      • Raw chicken stored above produce and ready to eat foods. Raw chicken was removed from fridge during the inspection.

In accordance with Section 2.9 of the NS Food Retail and Food Services Code, you must protect all food items from contamination such as water leakage, pest infestation or any other unsanitary condition. Cleaning required on walls, ceiling, and under / behind equipment and shelving in the walk-in cooler where the meat grinder is. This area must be cleaned at a frequency which prevents the build-up of dirt, dust and food debris.
