      • Feb 23- opened can of artichokes was observed in the walkin cooler. 1)An open can of Sunspun olives was observed in the glass door cooler. The can of olives was left uncovered in the cooler. Store leftover foods from an opened can in a food-grade container.Ensure to cover all foods stored in the cooler to prevent any risk contamination.

      • Operator did not have drain plug for both sink compartments. Only 1 drain plug onsite. Ensure an additional drain plug is provided for the 2 comp sink for proper dishwashing

      • Observed droppings on the floor corner (below the prep table by rear wall) and on floor corner next to upright wood shelf across the washroom. 2 traps observed with no captures. Clean up the droppings properly and monitor the area for activity.

      • 1) No pest control monitoring was observed inside the facility.-Ensure that the pest control is being maintained in the facility.

      • 1. The bottom layer of the standing freezer was broken/damaged.Fix the broken section of the freezer. All surfaces in a food facility must be smooth, easily cleanable, and impervious to moisture. 2. There was ice buildup in the standing freezer.Clean the standing freezer and ensure all food equipments are kept sanitary at all times.

      • 1)The Quat sanitizer was measuring less than 200 ppm.-Ensure that the Quat sanitizer is maintained at 200 ppm.2) The cleaning cloths were placed on the food counters.-Ensure that the cleaning cloths are placed inside a sanitizer solution.

      • 1)An open can of Sunspun olives was observed in the glass door cooler. The can of olives was left uncovered in the cooler. Store leftover foods from an opened can in a food-grade container.Ensure to cover all foods stored in the cooler to prevent any risk contamination. 2) Cheese containers were stored on the floor of the walk-in cooler.-Ensure that the food/ food containers are not stored on the floor.3) Black garbage bags were used to cover the dough prepared inside the prep cooler.The operator stated that she was covering it in order to prevent the dough from drying up.-Ensure proper food safe liners are used to cover the dough.

      • In the prep cooler inserts,Beef was measured at 7.6 degrees C.-Ensure that the perishable food is store at 4 degrees C or les under refrigeration.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • "Repeated Violation"Upon discussion with the operator, it was observed that manual dishwashing procedure was missing the sanitizing step. Follow proper manual dishwashing procedures by washing with soap, rinsing with clean water, immersing fully in a sanitizing solution for the minimum contact time according to the manufacturer's instructions, and leaving to air dry. Ensure to test the concentration of the sanitizing solution using appropriate test strips.

      • 1) No pest control monitoring was observed inside the facility.-Ensure that the pest control is being maintained in the facility.2) The back screen door was open.-Ensure that the doors are closed in order to prevent the entry of the pests.

      • 1)Raw wood was exposed on the shelves of the food storage racks.-Repair/refinish the shelves.-Ensure that the shelves are in a good repair/condition.2) Light cover was broken.Fix the light cover.
