      • Observation: Evidence of mice; droppings were noted in the back storage area on the wooden shelf, and inside old refrigeration unit used as storage. Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Clean and sanitize area where droppings are located and monitor situation.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Observed food build-up in multiple places such as inside refrigeration unit, on ingredient bins, by rear door and on some high touch areas such as refrigeration unit door handles. Food build-up can attract pests and act as a reservoir for bacteria.
      • Corrective Action: Operator to clean and sanitize any areas with food build-up.

    • 201 - Critical Food contaminated or unfit for human consumption [s. 13]
      • Observation: (CORRECTED DURING INSPECTION) Observed a box of spaghetti with mice droppings inside. Observed frozen meat kebabs stored open to contamination and with freezer burn. All foods on the premises must be wholesome and free from spoilage or adulteration and otherwise fit for human consumption. Unacceptable food items could cause food borne illness and become insect and rodent attractants or inadvertently be added to other food.
      • Corrective Action: Operator discarded box of spaghetti and frozen meat kebabs.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Observed mouse droppings throughout the facility including storage areas, on equipment racks and below equipment racks. There was a noticeable build up of food debris throughout the facility including on the floor, equipment and behind the stove and deep fryers.
      • Corrective Action: Facility was ordered closed to complete this work. The kitchen and food storage areas must be thoroughly cleaned and disinfected to remove rodent droppings and food debris from all areas. To facilitate this, all items on shelves and counters must be removed and equipment must be moved. Equipment, utensils, dishes, etc. must also be cleaned & disinfected.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Inadequate sanitizing rinse temperature. Rinse cycle temperature is less than 71C. High Temperature Automatic dish washers must provide a sanitizing rinse at 71C or more to sanitize dishware. Guage temperatures must meet maunfacturer's specifications.
      • Corrective Action: Operator to repair or replace high temperature sanitizer.
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Evidence of mice; droppings were noted throughout the facility, including on and under equipment racks, ingredient bins and counters. Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Clean and sanitize area where droppings are located and monitor situation.
    • 312 - Items not required for food premises operation being stored on the premises [s. 18]
      • Observation: Observed boxes, equipment and other items stored in the facility that are creating clutter and impeding cleaning and sanitizing.
      • Corrective Action: Operator to remove any items that are not required for use in the food premises.

      • Observation: Evidence of mice; droppings were noted on a shelf in the dry storage area and under the two compartment. Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Clean and sanitize area where droppings are located and monitor situation. Pest control has been contracted and is in on a biweekly basis.
    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Observed raw wood shelf in dry storage and floor finish is chipping which can hinder cleaning and sanitizing. Materials like raw wood will absorb juices and harbor and allow disease causing bacteria to grow. Proper materials and finishing is required to ensure adequate cleaning and sanitizing.
      • Corrective Action: Refinish surfaces to provide a durable easy to clean surface.
