Ensure all coolers, freezers, hot holding units, and the walk-in cooler is turned on to confirm the internal temperature.2. There were no thermometers in the coolers and freezers. Obtain thermometers and store inside to monitor the temperature. 3. A probe thermometer was not available. Obtain a probe thermometer to confirm internal temperatures of food when cooking, reheating, cooling or defrosting.
