    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • -It was indicated by staff that the meat slicer was taken apart and cleaned and disinfected at least once a day and sometime more frequently. Meat slicers if left out at room temperature, must be thoroughly cleaned and sanitized at least once every 4 hours to prevent growth of germs. Keep a log to ensure staff are keeping track of this. Remind your staff to do this, as this violation was observed during the last inspection.
