- The sushi cooler was measured at 50°F at the time of inspection. Sushi that had been prepared recently and placed in this unit was immediately moved to another cooler that was operating properly. All other high-risk foods stored in this unit since the previous evening were discarded.The sushi cooler must be repaired and must not be used to store high-risk foods until it is operating properly and able to maintain food at 4°C / 40°F or colder.
