- The mechanical dishwasher was not working at the time of the inspection, and repair personnel were onsite repairing it, thus; it could not be tested.Management did explain that while the dishwasher has not been working they have been manually washing and sanitizing all dishes in their 2-comp sink.

- Quats test strips are expired. - Please obtain new test strips with the color chart so you can verify the Quat-based surface sanitizer concentration (200ppm).

- A few mouse droppings were observed on the floor by the sushi station. The facility has an active pest control program with a professional company who services the facility bi-weekly. Please safely clean up the droppings, sanitize the affected areas, and notify the pest control company.

- Dishwasher not in working condition. Kitchen is equipped with a 2 comp sink and hand wash sink. Please repair the dishwasher
- 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
- Repeat infraction**staff was unable to locate pH meter and were unaware pH of rice requires to be taken. Please either get the meter calibrated such that you can use it or obtain pH test strips to verify the pH of the sushi rice. The sushi rice was tested with the inspectors test strips and had a recorded pH below 4.6 which is satisfactory.
