      • Observation (CORRECTED DURING INSPECTION): Small bar cooler for short term storage of milk - temperature is at 8C.
      • Corrective Action(s): Thermostat adjusted during inspection. Provide a thermometer in this small cooler to make sure temperature is at 4C or colder.

      • Observation: Two of the hand sinks in main kitchen (by grill and by dishwasher) have 25C and 20C hot water.
      • Corrective Action(s): Provide a blended warm water temperature of at least 38C (but not too hot) for adequate hand washing.
      • Note, the hand sink by front service counter - water temperature is satisfactory.

      • Observation (CORRECTED DURING INSPECTION): Small bar cooler - thermometer broken. Actual temperature (food and air) is about 8-9 C.
      • Corrective Action(s): Do not store milk (or higher risk foods) in this cooler unless the temperature is at 4C or colder. Thermometer replaced with a working thermometer during inspection.

      • Observation: Temperature gauges on commercial dishwasher havve an "E" reading. The water temperature for washing and sanitizing was ok (168F measured inside of the machine).
      • Corrective Action(s): Check manual. The wash and rinse water temperature gauges should be working. If not working, repair or provide an internal thermometer to verify temperatures when using the dishwasher.

      • Observation (CORRECTED DURING INSPECTION): Quat in sanitizer buckets detected less than 100 ppm. Ideal quat sanitizer range is 200 ppm - 400 ppm
      • Wiping cloths are not stored in sanitizer containers.
      • Corrective Action(s): Please ensure quat 200 ppm is provided in sanitizer containers. Ensure sanitizing solution gets changed every couple of hours or as needed.
      • Note: Please ensure manufacturer instructions for quat disensers are followed.

      • Observation (CORRECTED DURING INSPECTION): Wiping cloth storage: Quat ~100 ppm.
      • Corrective Action(s): Wiping cloths are required to be stored in a sanitizer at all times.
      • - Use 200ppm Quats solution and make as per manufacturer's instructions
      • - Change sanitizing solutions in sinks and buckets every couple of hours
      • - Change sanitizing solutions in bottles daily
      • - Use test strips to measure the concentration of sanitizer.

      • Observation: Facility not clean and organized. Unused items are being stored at facility. Cotton wood debris noted throughout facility.
      • Corrective Action(s): Clean and organize entire facility. Store all items in designated areas - utilizing shelves. (ie: Cleaning supplies - brooms/mops/vacuum, etc) Remove any/all unused items. (Ie: Racks/"gas" canister, etc.)
