- Ambient air temperature of reach-in cooler #3 measured 9.1 degrees Celsius; morning temperature logs indicated the cooler measured 1.6 degrees Celsius. Ice build-up observed on the condenser in the cooler. Potentially hazardous food moved to another functioning unit at time of inspection .Contact a service technician. Do not use the reach-in cooler until temperatures are maintained at 4 degrees Celsius or below.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- High-temperature dish washer to the right of the three-compartment sink final rinse temperature measured 64 degrees Celsius. The final rinse temperature must measured 82 degrees Celsius. Leak also observed coming from the dish washer. Discontinue use of this dish washer and contact a service technician to repair the final rinse temperature and the leak.
- 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(b) insects, rodents and other pests are controlled;
- A few rodent droppings observed on the floor under the dry storage shelves in the packaging room and at floor/wall junctions in the receiving hallway. Areas affected by rodent droppings were cleaned and sanitized at time of inspection.
