      • Observation: Surfaces are not sufficiently sealed or durable to facilitate regular cleaning and sanitizing. The shelving unit near the hot holding unit for the rotisserie chicken were not properly finished. Public Health significance) Materials like raw wood will absorb juices and harbour and allow disease causing bacteria to grow. Proper materials and finishing is required to ensure adequate cleaning and sanitizing.
      • Corrective Action: Refinish surfaces to provide a durable easy to clean surface.

      • Observation: A shelving unit with food packaging was less than 6 inches (30 cm) from the floor. Food and food related items stored close to the floor can be contaminated with floor debris.
      • Corrective Action: Ensure that food and food related items are stored at least 6 inches (30 cm) from the floor.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: A space between the convection oven and a shelving unit with food packaging had an excess of grease and food debris. Accumulation of grease and food debris can contaminate food and attract pests.
      • Corrective Action: Ensure that hard to reach areas between units are cleaned and sanitized regularly.

      • Observation: Refrigeration Temperatures for pasta cooler was slightly elevated (5-7°C). Similar to the records. (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production.
      • Corrective Action: According to records, temperatures go down to 4°C. In case where this continues, move potentially hazardous foods to working refrigeration unit. Supervisor was made aware to have it serviced if records keep showing temperatures are not at 4°C and below. Ensure temperature of 4°C are maintained at all times.

      • Observation: Refrigeration Temperatures are Slightly elevated (greater than 4°C) (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production.
      • Corrective Action: Move potentially hazardous foods to working refrigeration units immediately--or discard the potentially hazardous foods in the defective cooler and have the unit serviced. Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of 4° at all times.
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Portion of the prep table is made of wood which has a chunk broken off as well as scarring from use. All food contact surfaces should be smooth, non-porous, and easily cleanable.
      • Corrective Action: Resurface or replace countertop to ensure all food contact surfaces meet regulatory requirements stated above.
