      • The walk-in freezer is overly packed, making it impossible to enter and assess the items inside. The operator must maintain a clear walkway to evaluate items and clean the floors and surrounding area.Please ensure the walkway in the walk-in freezer is clear in case an investigation is necessary and apply the first in first out method.

      • The operator has not been conducting water sampling according to the required frequency.Seven samples were submitted in the past 15 months.Please start submitting samples every month.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The operator conducts self-monitoring. Complete Pest control documentation was unavailable on the premises.Operator possesses the AHS pest control checklist, but it is not being utilized
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The large white cutting board was not kept clean and in sanitary condition.Pleas ensure that employees are properly cleaning/sanitizing the cutting board after every use.

      • 1) The floor in the processing zone, inside cooling units, and near the receiving area needs thorough scrubbing and cleaning.Please ensure the specified areas are cleaned thoroughly now and consistently in the future.2) The walk-in freezer is overly packed, making it impossible to enter and assess the items inside. The operator must maintain a clear walkway to evaluate items and clean the floors and surrounding area.Please ensure the walkway in the walk-in freezer is clear in case an investigation is necessary and apply the first in first out method.

      • There is a lamb wrapped in a garbage bag. Operator states that it is to be discarded. Please discard this item.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mouse droppings in corner of facility.Advised operator to keep pest control logs from now on.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cutting board in poor condition with deep grooves and staining. Operator to re-surface/repair or find a new cutting board to use.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Walk in freezer is disorganized, not able to walk into it to review items in freezer. Operator should keep walk way free to assess items and clean floors and area.Please clear walk-way in walk in freezer.
