      • The chlorine concentration for the main low temperature dishwasher was sanitizing at 0 ppm. Service the dishwasher and ensure it is able to reach 100ppm. in the meantime, use the second dishwasher for cleaning and sanitizing dishware and utensils.

      • A gap was observed under the door located at the right side of the receiving bay.Seal the gap to prevent pest entry,

      • There was a leak observed on a pipe on top of the main dishwasher making water to pool in the surrounding area. Repair the leak.

      • There were cleaning cloths stored on food-contact surfaces. The inspector informed the staff/manager that cleaning cloths must be fully submerged in a sanitizer bucket solution at all times after use. The cleaning cloths were stored in a sanitizer bucket solution afterwards.

      • Paper towel dispenser located in the slice room was empty.Paper towel was promptly restocked.
