- Observation (CORRECTED DURING INSPECTION): 1 container of 30 small pre-portioned turkey slices were stored in the malfunctioning cooler and recorded at an internal temperature of 10.1C. Staff stated that turkey slices have been in this cooler overnight (>2 hours in danger zone temperature of 4C - 60C) which might have resulted in potential food contamination due to bacterial growth and/or toxin production. Staff voluntarily discarded the aforementioned container during inspection.

- 0ppm QUATS sanitizer recorded in the sanitizer pail, 3rd sink of warewashing (dishes soaked) and at the dispenser unit. QUATS bottle hooked to dispenser was full. Staff manually prepared 200ppm QUATS sanitizer solution during inspection.
- Corrective Action(s): Please ensure that all food contact surfaces are adequately washed and sanitized. If there is an issue with dispenser, manually prepare the sanitizer solution following manufacturer's instructions until the dispenser has been repaired/serviced.

- Observation (CORRECTED DURING INSPECTION): QUATS sanitizer concentration was recorded at 0ppm in the two sanitizer pails and <50ppm in the 3rd compartment. QUATS sanitizer bottle hooked to dispenser was observed empty. Low concentration of QUATS may not adequately sanitize the food contact surfaces.
