      • Observation (CORRECTED DURING INSPECTION): A full insert of cooked chicken was cooling in the top section of the prep cooler. Internal temperature measured at 16C. Top section of the prep cooler is used to maintained cold food at 4C or less and should not be used to cool hot food.
      • Corrective Action(s): Staff move the chicken to the walk-in cooler. Do not use the top section of the prep cooler to cool any hot potentially hazardous food.

      • Corrective Action(s): Service/fix the food sanitizer dispenser to ensure 200-400 ppm of quaternary ammonium sanitizer is dispensed. Staff able to fix the dispenser at the time of inspection.
