- -Quats based Lemone X disinfectant solution used to clean food contact surfaces in the kitchen area.-Required concentration is 200ppm but 100 ppm was observed in pre-made solution provided by staff.-New solution of Lemon X with the appropriate concentration of 200 ppm was made for use on food contact surfaces in the kitchen. -Quat test strips were available to test Lemon X solution concentration.

- 03. Is all food in this facility fit for human consumption and not unwholesome, spoiled, or adulterated?
- In the dry storage room, there was a large, hermetically sealed can of crushed pineapple. The can had a large, deep dent along the side of it. The dent was approximately 1-2 inches wide and 3-4 inches long.PHI discussed the risk of botulism toxin developing in cans with large dents. For this reason, Operator agreed to discard the can. PHI will send operator a document reviewing risks assessment for dented cans.
