    • 201 - Critical Food contaminated or unfit for human consumption [s. 13]
      • Observation: (CORRECTED DURING INSPECTION) Observed a single can of baked beans within the dried goods inventory severely dented along products seal and observed the can's labelling soiled with the canned food's contents along the exterior of the can. All foods on the premises must be wholesome and free from spoilage or adulteration and otherwise fit for human consumption. Unacceptable food items could cause food borne illness and become insect and rodent attractants or inadvertently be added to other food.
      • Corrective Action: Operator voluntarily discarded the canned good and will ensure that all food products that are spoiled, adulterated or otherwise unfit for human consumption are immediately removed from the premises.
    • 206 - Critical Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Potentially hazardous hot foods was observed and stored at below 60°C. Health officer temperature checked the macaroni and cheese and probe thermometer reported an internal temperature of 55.2 °C. All potentially hazardous foods must be stored at below 4°C or above 60°C - out of the danger zone to prevent bacterial growth and possibly food borne illness
      • Corrective Action: Operator placed food product in large oven and reheated the food item to 74 °C and increased the heat dial on the commercial hot holding unit. The food product's temperature was rechecked before the end of the inspection. Rechecked the internal temperature with a probe thermometer and the reported temperature was 61.0 °C. Operator to ensure that all hot holding units must maintain a temperature of 60°C or more, monitor and adjust the temperatures, and have serviced as required.
    • 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
      • Observation: Observed the two large stand-up stainless steel refrigerators ( labelled Fridge 1 and Fridge 3) and large stand-up freezer unit (Fridge 2) without accurate indicating thermometers. Exterior digital thermometers can fail or inaccurately indicate internal equipment temperatures. Potentially hazardous food not held at the appropriate cold holding temperatures can permit the growth of bacteria and contaminate food products resulting in potential foodborne illness.
      • Corrective Action: Operator to purchase and install accurate indicating thermometers within each refrigeration unit to ensure cold holding temperatures of 4 °C in refrigerators and -18 °C. within the freezer units will meet compliance with British Columbia's Food Premise Regulation (B.C. Reg. 210/99).
